Our Story

We are a small family-owned brewery specializing IN DUTCH & SCANDANAVIAN INSPIRED ales. we feel a sense of time & place is necessary to craft great farmhouse beers. BY USING THE terroir of the midwest as our canvas, WE BLEND & FERMENT OUR BEERS W/ NATIVE FRUITS, VEGETABLES, HERBS, SEEDS, SALTS & MICROFLORA TO CREATE BALANCED BEERS THAT TASTE NATURAL. WE USE A VEGAN CONSCIENCE APPROACH TO GIVE OUR DRINKERS AN EQUAL OPPORTUNITY TO ENJOY OUR DRINKS. We feel strongly about using our INFLUENCE & platform to uplift OUR COMMUNITY, MAKING USE OF OUR LOCAL AGRICULTURAL PARTERS & GIVING BACK TO PEOPLE IN NEED.

WITH OUR BEVERAGES WE hope to enlighten your childhood sense of adventure. taking us both down a path of exploration & discovery BUT not taking ourselves too seriously is part of that process. We came into this industry as artists first, not brewers. our fascination w/ the history & agricultural story of beer has kept us on a path to crafting something new.

starting this project in a garage BACK IN 2015 ALLOWS us TO STAY HUMBLE ABOUT OUR PAST. Every year we learn a little more, grow a little more & climb a little further down the rabbit hole. Soon we hope to build the brewery we can call our first official home. For now, we call Duneyrr Brewery in the south loop our home, where we craft beer under their roof. 2025 will bring us new opportunities, expanding our distribution footprint & introducing new concepts to the portfolio.

WHERE IS DUTCHBAG BREWED?

SINCE JUNE OF 2021, WE HAVE BEEN IN RESIDENCE AT DUNEYRR IN THE SOUTH LOOP. BREWING AT DUNE PROVIDES US AN OPPORTUNITY TO BREW, CELLER & PACKAGE OUR OWN BEER; LEARNING & GROWING W/ EVERY BATCH. BESIDE THE OBVIOUS HANGUPS IN TODAYS POLITICAL & ECONOMIC CLIMATE, WE’VE GOT OUR EYES ON OUR FIRST DUTCHBAG SPACE COMING IN 2023.

WHAT BEERS DOES DUTCHBAG MAKE?

NOT REALLY A SHORT ANSWER HERE. WE LIKE TO SAY THAT THE DB BEERS ARE PART OF A STREAM OF CONSCIOUSNESS. AS OUR INGREDIENTS, PRACTICES, YEAST CULTURES & THE BEER LANDSCAPE CHANGE, WE ADAPT. WE LOVE MAKING RUSTIC STYLE SOURS, SOME OF WHICH FEEL & TASTE LIKE GOSE, BERLINERS, OR SAISON. DUTCH HISTORICAL STYLES (BOK, PORTER, LAGER, PILSNER) ARE THE BASIS OF WHAT WE DO ON OUR CLEAN SIDE. ALWAYS EXPECT SOMETHING FRESH & FUNKY, SOMETHING YOU’VE NEVER TASTED BEFORE.

ALTHOUGH WE ARE NOT VEGANS, WE APPRECIATE THE OPPORTUNITY TO PRODUCE BEER THAT EVERYONE CAN DRINK. NO COW JUICE, NO MEAT PRODUCTS, NO ANIMAL BASED FILTRATION METHODS. ANY HONEY WE USE IS ETHICALLY HARVESTED. OK? YEP.

WHERE DOES “DUTCHBAG” COME FROM?

BACK IN THE OLD COUNTRY, A BAG THAT WAS WOVEN FROM STRONG ENOUGH MATERIAL TO CARRY ONES DUTCH OVEN FROM YOUR HOME TO ANOTHER’S WAS CALLED A DUTCH-BAG. NOT EVERYONE HAD A PAN LIKE THIS, SO BRINGING IT TO A NEIGHBORS, TO HAVE THEM BORROW, OR TO COOK FOR THEM, BECAME AN OPPORTUNITY. WE BELIEVE THIS IDEA OF THE BAG REPRESENTS COMMUNITY, SHARING & CREATIVITY THAT COMES W/ THAT OPPORTUNITY.

DO YOU BREW ANYTHING BESIDES BEER?

IN 2025 WE’LL START TO PRODUCE OUR FIRST BUBBLY MEAD CALLED ROYAL JELLY. made with Il State honeY, LAKE MICHIGAN WATER & FARMHOUSE YEASTS. royal jelly will be our first foray into low intervention winemaking & were fuc*ing stoked to get off the ground.
